This is my second attempt at the pale ale I had brought to the last meeting. I tok the vienna back to 1 lb, and added an extra lb of 2-row to reduce the bready taste that was overpowering while it was young. This was pitched onto a S-04 yeast cake from my Centennial IPA, and man, talk about crazy fermentation! Pitching onto a yeast cake is the way to go, but you better have a blow-off tube rigged up. I had 3-4 inches of krausen after 2 hours.
